Squab "Extra"
At 5 weeks old and without having begun to fly, the Squab could be said to be the noblest bird that exists. It is fed only with the food secretion of its parents, which gives it very tender meat and a very special flavor. It is not yet very well known in home cooking, but it is well known in the kitchens of large restaurants and delicatessen establishments. It usually weighs approximately 500g.
